WOSA
I was studying Physics in the University of Athens, while at the same
time working in restaurants as a student. I became more involved in the
hospitality industry, after I fell in love with wine. From there I
started working in some of the best restaurants in Greece and doing the
first 3 levels of WSET, under the guidance of the only MW in Greece. I
began to have the chance to taste more wines and understand differences
and styles from regions and countries. Following this I made the first
big step by moving to England and working for The Fat Duck, where I had
the chance to work with a great sommelier team, while at the same time
finishing my WSET diploma
The steps that followed came naturally, leaving
The Fat Duck for The Ledbury and working in London, where the chances to
taste great wines are numerous.
From South Africa, I am a lover of the rich,
well textured Chenin from Swartland and the honeyed Semillons from
Constantia and Stellenbosch. In terms of reds I like the Syrah and the
Cabernets from the cooler sites, while I think the future lies on the
Mediterranean grape varieties and Zinfandel as well. With the trip in
South Africa I hope to understand more about the regions and the people
behind the labels, their philosophy and culture.
