Mushroom pairing with Fleur du Cap wines

TheBergkelder Vinotèque in Stellenbosch hosted a mushroom and wine evening with exotic fungi chosen by Dr. Adriaan Smit from the South African Gourmet Mushroom Academy in Somerset West.
Adriaan is founder of the Mushroom Research Centre at ARC Infruitec-Nietvoorbij, Stellenbosch, the only research centre in South Africa dealing with the identification and research of gourmet and medicinal mushroom species. He organised and chaired the 1st Educational Gourmet and Medicinal Mushroom Conference, Franschhoek, and was the only South African to present a paper at the 1st International Conference on Medicinal Mushrooms. As invited guest speaker, he addressed an international audience at World Fungi 2007, Spain.

As we headed into the cellar in the mountain we were welcomed with a refreshing glass of J.C. Le Roux MCC Brut. Predominantly made from Pinot Noir with a splash of Chardonnay this MCC is refreshingly fruity with a subtle yeastiness.
