Glenelly Estate's put together a guide to help you serve sparkling, rosé, white, red and dessert wines at their best, with simple temperature guidelines and a few practical tips.

In a warm climate, temperature is not a detail but an essential part of the wine experience. The way a wine is served influences its aroma, structure, and overall balance. Too warm, and alcohol dominates. Too cold, and the wine closes in on itself. Finding the right temperature allows each wine to reveal its intended character.

Sparkling wine: 6-8°C

Chilled to preserve freshness, precision, and fine effervescence. Cooler temperatures ensure a refined mousse and a clean, vibrant finish.

Tip: A short rest in an ice bucket with water will chill evenly.

Rosé: 8-10°C

Served cool to highlight freshness and delicate aromatics while maintaining balance and poise on the palate.

Tip: Remove from the fridge a few minutes before serving.

White wine: 8-12°C

Lighter styles benefit from cooler temperatures to enhance acidity and lift, while fuller wines reveal texture and depth when slightly warmer.

Tip: Allow the wine to evolve gently in the glass.

Red wine: 14-18°C

Best enjoyed at a cool room temperature. Serving slightly chilled preserves structure, aromatic clarity, and balance.

Tip: On warmer days, a brief chill will refine the wine.

Dessert wine: 6-8°C

Chilled to maintain freshness and elegance, ensuring sweetness remains balanced and never overwhelming.

Tip: Serve well chilled for precision and lift.
