Recipe: Venison pie

Ingredients

  • 1 kg venison, cubed
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 2 cloves garlic, crushed
  • 2 tbsp tomato paste
  • 250 ml beef stock
  • 250 ml red wine
  • 2 tbsp flour
  • 1 tsp thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 sheet ready-made puff pastry
  • 1 egg, beaten

Method

  1. Preheat the oven to 190°C.
  2. Heat the olive oil in a large pot and brown the venison in batches.
  3. Add the onion, carrots, celery and garlic, cooking until softened.
  4. Stir in the flour and tomato paste and cook for one minute.
  5. Add the red wine, stock, thyme and bay leaf.
  6. Simmer gently for approximately 1½ to 2 hours, or until the venison is tender and the sauce has thickened.
  7. Season to taste and transfer the filling to a pie dish.
  8. Cover with puff pastry, trim the edges and brush with beaten egg.
  9. Bake for 30-35 minutes until golden brown and crisp.
