Winter changes the pace on the farm. Days are cooler, the light softens and the tasting room becomes a place to settle in rather than pass through. We’re introducing two new tasting experiences shaped by the season: one centred on local ingredients and the Spier 21 Gables range, the other designed to strip wine back to its essentials.
The winter table: A 21 Gables pairing
When the cold sets in, good food and good wine come into their own. Our winter wine and seasonal food pairing brings together earthy, seasonal dishes and the depth of the 21 Gables, with each course chosen to let the food and the wine each have their moment.
The tasting begins with a white bean velouté and parmesan toastie with mushroom soil, paired with 21 Gables Chenin Blanc 2023 – the signature varietal of Cellar Master Johan Jordaan, honoured as Chenin Blanc Master Winemaker for the second consecutive year. A beetroot and blackberry cracker follows alongside 21 Gables Cabernet Sauvignon 2023, before the tasting draws to a close with a dark chocolate torte and a glass of 21 Gables Pinotage 2020.
A celebration of the good things that grow here and the wines that carry them forward.

Sensorial Tasting: Journey through the vine
What happens when you can’t see what you’re tasting?
The Sensorial Tasting shifts the focus to your other senses. Set in the private Green Room of the Spier Manor, this intimate experience invites guests to taste their way through the Creative Block range blindfolded – relying on aroma, sound, touch, texture and taste to explore varietals and three wine-paired canapés.
Without labels or visual cues, something shifts. Preconceptions fall away and other senses step forward. Inspired by The Blind Astronomer exhibition from the 2025 Light Art season, the experience grew from a simple idea: that removing one sense can deepen the others.
We like to think of wine tasting as a means of discovery. It’s playful, a little unexpected and often surprisingly revealing – about the wines, and about yourself.

Looking ahead: Winemakers’ Dinners
There’s something about a long table, a good bottle and the people who made it that makes an evening worth clearing your diary for. When the wine flows, stories tend to follow.
A new series of winemakers’ dinners is taking shape for 2026, with evenings designed around shared tables, considered wines and the people who make them. Expect thoughtful menus, wines poured with context, and conversations that stretch long after the plates are cleared. Details are still coming together, but the intention is simple – to bring people closer to the wines and to each other. More to share soon.
