Beyond the bottle: Stellenbosch scientist launches world-first instant wine sachet

In a move that is set to disrupt the global beverage industry and revolutionize the packing lists of hikers, a local PhD student has finally cracked the code on "dehydrated viticulture."

The science of "dry" wine

Izak "Sakkie" Mattys, a researcher at Stellenbosch University, has spent the last four years developing a revolutionary powder-based wine product. Sponsored by Thirsti, the project utilises Thirsti’s famous high-pH water to ensure the molecular stability of the grape esters during the rehydration process.

The result? A lightweight, 20g sachet that, when mixed with 500ml of water, reconstitutes into a premium, crisp dry white wine with a perfect 13% ABV.

"Jislaaik, I just wanted a drink"

The invention was born from pure frustration. "Jislaaik," says Sakkie, "I spent years on hikes wondering how to solve this. After months of trial and error (and some very sour outcomes), I hit on the winning recipe. We have plenty of sun in South Africa; I realized we just needed to apply the sun-dried formula of our forefathers to the cellar."

While the road was paved with many "turfed" prototypes, Sakkie is delighted to announce the final product line, in tribute to the legendary Chris Edge, with a cheeky working title: "It’s Dry, But You Can Drink It". Sincere apologies to Savanna.

The future is freeze-dried

The innovation doesn't stop at still wine. Sakkie is currently collaborating with "Mr. Bubbles" himself, Pieter Ferreira, to develop a formula for Instant Cap Classique. By simply adding Thirsti Sparkling Water to the sachet, hikers can enjoy a sophisticated "Dry Bubble" at the summit.

To ensure the full gastronomic experience, Sakkie has teamed up with professional outdoor enthusiast Quintin du Plooy from Outdoor Escape in Stellenbosch and the team at Hungry Hiker in Durbanville. Together, they are launching a range of Sachet and Stew pairings; coordinated de-hydrated meals specifically designed to complement the reconstituted wine profiles.

"It's simple," says Quintin. "Open your meal sachet, open your wine sachet, add cold water to the one, hot water to the other (don't get them mixed up), and you have a five-star pairing at 2 000 meters above sea level."

The first batches of It's Dry are expected to hit the shelves in the next month.
