Under the craftsmanship of winemaker Andri le Roux, both wines underwent whole-bunch pressing, fermentation in stainless steel to preserve freshness, and extended lees ageing of at least 18 months in bottle. From a single 48-year-old dry-farmed vineyard in Agter-Paarl, registered as Old Vine (1977), this Cap Classique is a rare expression of Chenin Blanc’s heritage and depth. Grown in the same granite- and shale-rich soils, the old vines yield grapes of remarkable intensity and natural balance.
Pale green in colour, it opens with lively aromas of Granny Smith apples, lime and grapefruit. The palate is defined by fresh minerality, beautifully integrated with a classic biscuity finish from its extended lees ageing. With crisp acidity and an elegant profile, it is the ideal companion to long summer lunches, festive seafood feasts or New Year’s Eve toasts.
