Schalk Willem Opperman, the celebrated winemaker at Quoin Rock, embodies a blend of tradition, innovation, and an unwavering love for the art of winemaking. Born in  Stellenbosch and raised in Oudtshoorn in the Klein Karoo, Schalk's journey into the wine world began amidst the deep-rooted connection between food, wine, and family gatherings. A Paul Roos Gymnasium alumnus, Schalk pursued a BSc in Viticulture and Oenology at Stellenbosch University, setting the stage for an illustrious career spanning more than two decades.

Having worked at some of South Africa’s most prestigious wineries, including Rust & Vrede, Holden Manz, and Lammershoek, and completing harvests in California and Saint-Émilion, France, Schalk’s expertise has been shaped by global experiences and extensive travel across the French, Italian, Portuguese, and American wine regions.

A philosophy of authenticity and balance

For Schalk, winemaking is a harmonious interplay between science and art. His philosophy hinges on two critical intersections: precise viticultural practices leading up to the ideal picking date and the intricate art of blending components to craft the perfect wine. Schalk's commitment to authenticity ensures that each varietal reflects its true essence—whether it’s a Cabernet Sauvignon embodying depth and structure or a Chenin Blanc exuding freshness and minerality.

“To me, every wine is a journey,” Schalk says. “Authenticity, quality, and minimum intervention are key. A wine should transport the drinker.”

Achievements at Quoin Rock

Since joining Quoin Rock, Schalk has led the brand to new heights, with 2024 marking a banner year. The estate’s wines have garnered an impressive 11 Top 10 or Trophy awards, with standout performers like the Knorhoek Chenin Blanc and Simonsberg Red Blend earning critical acclaim. This success, he notes, is the result of a cohesive team effort, driven by passionate colleagues and the visionary leadership of Denis Gaiduk, Quoin Rock’s dynamic managing director.

The legacy of winemaking

Schalk views winemaking as more than a profession—it’s a legacy. “Wine is a form of history in a bottle,” he reflects. “My child, years from now, can share a bottle of wine I made with their grandchildren. That’s the beauty of it.”

Inspired by industry legends like Jean Engelbrecht and Chris Keet, as well as his family, Schalk continues to push boundaries while remaining rooted in his love for nature and history.

At the heart of Schalk’s winemaking style is collaboration. He thrives on honest feedback and teamwork in the cellar, believing that every contribution from his colleagues enhances the final product. For Schalk, perfection in winemaking is elusive, but the pursuit of improvement with every vintage is what makes the journey worthwhile.
