Recipe: Mushroom Bruchetta paired with Perdeberg Cellar Merlot

Celebrate one of South Africa’s most enjoyed reds, Merlot, with Perdeberg Classic Collection Merlot 2023.

This wine pairs beautifully with a light yet flavourful mushroom bruschetta. Recipe provided for your enjoyment below:

Recipe: Mushroom bruchetta

Ingredients

  • 1 x packet of brown mushrooms
  • 3 cloves of garlic
  • A good few sprigs of fresh thyme
  • a fresh, good quality baguette
  • Grated parmesan (optional)

Method

  1. Chop mushrooms roughly in small chunks.
  2. Brown mushrooms in hot, pre-heated pan.
  3. Add the butter and garlic and turn down the heat.
  4. Season generously with salt and black pepper.
  5. Add in the fresh thyme and let the flavours infuse.
  6. Finish off with a splash of cream, let simmer for a few minutes and turn off the heat.
  7. Cut the baquette in inch thick slices and drizzle with olive oil.
  8. Place on a tray and toast both sides in the oven.
  9. Spread the mushrooms ragu on the warm toasted bread, sprinkle with parmesan and serve.
