Z Collection Sauvignon Blanc 2023

The Z Collection Sauvignon Blanc's performance on the international stage emphasizes the outstanding quality our winemakers are achieving from our beautiful terroir. Its crisp acidity and well-balanced structure have consistently impressed judges, earning it high scores and prestigious awards, with the most recent accolade being the Gold award at the Trophy Wine Show last month, scoring 97 points.

The nose shows concentrated vibrant gooseberry, nectarine and guava with subtle oak spice and undertones of fresh nettle. The generous mouth feel is supported with a fine natural lime acidity.

From the winemaker's kitchen: Quesadilla recipe

This is Charles' go-to snack when he is short on ideas for pre-braai treats. They are crowd-pleasers and easy to prepare. Not only are they delicious, but they also pair wonderfully with a glass of Zevenwacht Chardonnay.

Ingredients

Basic ingredients

  • Tortillas
  • Mozzarella cheese
  • Cheddar cheese
  • Italian herbs and spices
  • Chili (optional)

Tip: Wraps work just as well as tortillas.

Filling suggestions

This is where your creativity comes in. Combinations that work include:

  • Chorizo, red pepper, olive and pinch of garlic
  • Anchovies, olive and capers
  • Chicken and peppadew

Tip: A minimalist approach is key with quesadillas: overfilling the tortillas can lead to a messy experience. The subtle taste of a few select ingredients makes them special – they’re not meant to be overloaded like a pizza.

Preparation

Begin by spreading a thin layer of cheese on one tortilla; this acts as the glue for your ingredients. Sprinkle your chosen spices over the cheese. Then, layer your fillings and finish with another sprinkle of cheese. Place a second tortilla on top to complete your ‘Mexican hamburger’.

Method

Carefully place the quesadilla in a pan set to medium heat. Wait until the cheese begins to melt, then flip it to the other side for additional heating. The goal is for the tortillas to develop a slight golden hue and crisp texture, while ensuring the cheese is melted and the fillings are warmed through. Once done, remove from the pan and slice the quesadilla into eight even pieces using a pizza cutter.

Serve the quesadilla immediately, accompanied by a dip of your choice, such as sour cream, guacamole, or your preferred sweet chilli sauce.
