Easter pairing recipe: Freda's easy soufflé
Fredagh, a pioneer in both the kitchen and the winery, crafted this very special chees soufflé recipe in the early 20th century, gracing the tables at many a lavish party. Combining simplicity with elegance, this culinary masterpiece became a household favourite.
Paired with the Homestead Chardonnay, this soufflé elevates any meal into a festive feast. And now, this Easter, you can enjoy it too.
Set the tone for a memorable Easter meal with this recipe card from Freda’s collection:
Ingredients
- 2 tins asparagus or mushroom soup
- 3 egg whites beaten to stiff consistency
- 6 eggs yolks
- 1 cup of grated cheddar or parmesan
- ½ cup breadcrumbs
Method
- Mix the soup with the egg yolks and beat well.
- Fold in the egg whites, don't over mix!
- Transfer the mixture to small ramekins or casserole dishes.
- Top up with the cheese and the breadcrumbs.
- Bake at 120°C for +-40 minutes, turning up the heat to 180°C at the end for a golden crust.
- For something special: fry whitebait or boil and flake Haddock, or Kipper to top before serving.
This soufflé pairs perfectly with Bellingham Homestead Chardonnay.
