Fleur du Cap offers a unique Salt Pairing experience at our “cellar in the mountain”, the Bergkelder in Stellenbosch. Discover the unusual combination of Fleur du Cap wines and artisanal salts at our daily wine tastings, where handmade salted morsels meld with our superb wines.

As with wine - area, climate and elements influence the character of salt. Just as Fleur du Cap embodies regional excellence by selecting grapes from distinctive vineyards that best express varietal character and terroir in the wines, there are regions of excellence in salt production. Salt can have a significant impact on food and wine pairing. When expertly paired, salt can improve the wine and lend a richer, smoother texture.

The wine and salt pairing includes the following pairings:

Fleur Du Cap Sauvignon Blanc with Seasoned Butter Popcorn
The Fleur du Cap Sauvignon Blanc is brilliantly clear with green edges and shows aromas of fig leaves, classic gooseberries, asparagus and delicate tropical fruit. It’s paired with seasoned butter popcorn, dusted with Kala Namak Salt, an Indian mineral salt with a pinkish-grey colour.

Fleur Du Cap Chardonnay with Green Olive Tapenade
This full bodied Chardonnay is smooth, rich and layered, finishing off with a subtle mineral linearity.This wine is paired with green olive tapenade which brings forward the woody characters reminiscent in this superb wine, whilst the olive oil compliments on the smooth rich butterscotch taste that lingers in the back, making you crave for more.

Fleur Du Cap Merlot with Carpaccio of Beef
The Merlot has a deep ruby colour with a bright hue.On the nose it shows multiple layers of dark fruit such as plum and blackcurrant with a hint of oak spice. Perfectly paired with carpaccio of beef, blushed tomato, horse radish crème and micro herbs. This dish is accompanied with Khoisan Salt from the South Africa’s West Coast, a fine grain sea salt of the purest quality.

Fleur Du Cap Cabernet Sauvignon with Duck Rillette
This complex Cabernet Sauvignon has a dark deep colour and concentrated aromas of Christmas cake, blueberry and violets with hints of cassis.The strong flavours present in the duck rillette brings forward the subtle nuances of lead pencil shavings and complex oak notes of the wine. The dish is pairedwith Oryx Desert Salt, South Africa’s own natural white crystal salt.

Noble Late Harvest with Homemade Red Alaea Fudge
The lovely balance between sweet and fresh acidity of this Noble Late Harvest stands up well to a fairly sweet dessert. The fruity notes of the wine dominated by peach and dried fruit coupled with the silky mouthfeel are well weighted for the fudge.
