After harvesting, the grapes were brought to the cellar and destalked. Fermentation took place in open fermentation tanks with regular punch downs to gently extract the colours and tannins. Once fermented dry the wine was taken to French Oak Barrels, 5% new barrels and the balance 2nd, 3rd and 4th fill barrels. This is to allow the fruit to shine and the oak to be a support in flavour. The wine was then prepared for bottling.It’s good withPerfect glass on its own. Excellent as a food partner. Chill it for about 30 minutes before service to enhance the experience.
