Taking place in Azure Restaurant, the special four-course dinner will be co-hosted by Azure’s Executive Chef, Henrico Grobbelaar, and three outstanding wine makers from the Tulbagh area – Pierre Wahl from Rijks Private Cellar, Dewaldt Heyns representing Saronsberg Cellar, and Matt Krone from House of Krone. The evening commences with Oyster, served with oyster horse radish cream and French onion and chicken gelée, beautifully paired with Matt Krone’s Krone Borealis Cuvée Brut 2009. This is followed by a Crayfish composition with scallop and peach with coriander; with Rijks Private Cellar Chenin Blanc 2009 and Saronsberg Viognier 2012 accompanying this fresh, light dish. Chef Grobbelaar then serves Braised duck as egg and smoked pork belly, with lentils, bean succotash and fowl jus; combined with Dewaldt Heyns’ Saronsberg Shiraz 2010. The main dish comprises Springbok loin with forest mushroom risotto, soy shitake, sweet potato and purple fig jus; for which Rijks Private Cellar Pinotage 2009 is the perfect match. For the grand finale, Grobbelaar presents Chocolate cremeux with raspberry, tonka bean pear, and white chocolate Chantilly, complementd by House of Krone’s Rosé Cuvée Brut 2009.
