Recipe of the month: Chef Karen's crispy buttermilk fried chicken burger

Bring a taste of Franschhoek home with our chef’s favourite indulgence. Crispy, golden, and bursting with flavour – this burger has become a crowd favourite at our restaurant.

Ingredients

Chicken Marinade

  • 4 chicken fillets
  • 1 cup buttermilk
  • 1 tsp each: salt, garlic powder, onion powder, smoked paprika
  • 1⁄2 tsp each: dried thyme, black pepper Splash of hot sauce (optional)

Coating

  • 11⁄2 cups flour
  • 1/4 cup cornflour
  • 1 tsp each: baking powder, salt, smoked paprika
  • 1⁄2 tsp each: garlic powder, black pepper
  • Pinch of cayenne (optional)

Method

To make

  1. Whisk together marinade ingredients, add chicken, and chill for 2 hours or overnight.
  2. Mix coating ingredients. Dredge chicken in flour mix. (Tip: double dip in buttermilk + flour for extra crunch)
  3. Fry a small test strip, taste, and adjust seasoning if needed.
  4. Fry chicken at ±170°C for 6-8 minutes, until deep golden and cooked through.

To serve

Serve in toasted buns with lettuce, tomato, pickles, and a dollop of sauce (made with mayo, buttermilk, mustard, lemon, honey, salt, and pepper).
