Stellenzicht Heritage Month recipe series: Thunderstone Rosé and strawberry hertzoggies

Stellenzicht and Elmarie Berry present a recipe for strawberry hertzoggies, which pairs wonderfully with Stellenzicht Thunderstone Rosé.

First up is our loved Thunderstone Rosé and Strawberry Hertzoggies. A Hertzoggie, also known in Afrikaans as a Hertzogkoekie or in English as a Hertzog cookie, is a jam-filled tartlet or cookie with a coconut topping commonly served on a cup-like pastry base. These delectable cookies are named after General J. B. M. Hertzog, who was Prime Minister of South Africa from 1924 to 1939.

The strawberry hertzoggies pair wonderfully with our Thunderstone Rosé, because the strawberry jam filling wonderfully complements the "strawberries and cream" flavour profile as well as it's beautiful, perfumy nose. Enjoy!

Recipe: Strawberry Hertzoggies

Ingredients

Serves 12

  • ¾ cup desiccated coconut
  • 2 free-range eggs, separated.
  • 5 T caster sugar
  • 2 x 250 g sheets all-butter puff pastry, thawed.
  • strawberry jam

Instructions

  1. Preheat the oven to 180°C and grease or spray a muffin tray.
  2. Using a cookie cutter, cut 12 rounds out of the pastry and place in the prepared muffin tray.
  3. Top each piece with a spoonful of jam.
  4. Beat the egg whites until soft peaks are formed
  5. Add the caster sugar beat until the sugar is dissolved.
  6. At this stage it looks like a meringue.
  7. Add the coconut and fold in.
  8. Top each tart with a spoonful of coconut mixture.
  9. Bake for 15-20 minutes, or until golden brown.
