We had our "end of harvest" party on the 14th of March this year, the earliest ever which certainly affirms the effect of global warming. Our team at Villiera Wines, which included a pair of French winemakers, was in good spirits, knowing that some great wines were lying in the cellar, awaiting their release into the market.
The harvest began early and the cobwebs were quickly shaken off. The early varieties yielded less than usual, but a bigger yielding second half rectified quantities. Quality was good throughout due to healthy fruit and timely picking. As usual, Cap Classique was a focus category and our team put in maximum effort.
In the ever-evolving world of winemaking, a trend that has been rekindled is the use of clay amphora for fermentation. This revival of traditional techniques infuses wines with a depth of character and intrigue. Notably, our large clay amphora (also called a Pithos) is crafted from clay sourced at Villiera. This vessel is utilized for the fermentation of the Cap Classique Pithos base wine, which symbolizes a fusion of heritage and innovation.
We have been expanding our range of Cap Classiques recently by adding a rosé to the Pearls of Nectar label and most recently the super premium Cap Classique called Pithos.
Unveiling Pithos Cap Classique
In 2015, we embarked on a journey to craft something truly extraordinary for release in 2024 to celebrate 40 years of producing Cap Classique.
Through meticulous planning and a profound commitment to quality, Pithos was born as a testament to the Grier family's enduring legacy of pushing the boundaries of tradition and innovation. This Blanc de Blancs Cap Classique underwent secondary fermentation in a clay vessel, known as amphorae or Pithos which contributes to the level of depth and complexity that sets it apart. It was bottled in an iconic bottle and matured on the lees for an extended period.
Pithos unveils a unique expression of elegance with delicate bubbles and harmonious flavours. This sparkling wine exudes notes of crisp apple, citrus zest and subtle hints of brioche, culminating in a truly exceptional sensory experience.

New vintages
The 2019 vintage of The Clan is intensely perfumed with a medley of dark berry fruit, entwined with notes of liquorice, violets and a subtle undercurrent of tobacco, spice and graphite.
With a full-bodied character, it envelops the palate with ripe succulent tannins, offering a luxurious texture and mouthfeel. The wine's impressive length ensures a lingering finish.
Adding a touch of freshness and vitality, a small percentage of Carignan complements the blend, further enhancing its allure and complexity.

We have recently revamped our wine-tasting experiences, offering an enticing array of options for wine enthusiasts. Among the highlights is the introduction of carefully curated charcuterie boards with delectable pairings of artisanal meats, cheeses, and accompaniments that perfectly complement the wines.
