As we transition into the russet hues of autumn, we are delighted to share the latest news and events from our picturesque vineyard. From new restaurant offerings to safari tastings, there is plenty to look forward to this month.

A symphony of flavours and melodies at Zevenwacht's alfresco restaurant

Our new alfresco restaurant promises a delightful symphony of flavours, family, and music. Here, every Sunday is a feast for the senses, where delectable roasts and the freshest local ingredients evoke the comforting flavours of home.

From the winemaker's kitchen: Chimichurri sauce recipe

This is winemaker Charles's unique interpretation of a Chimichurri sauce, crafted with fresh ingredients from his garden. It reflects his personal twist on the sauce, diverging from any traditional or authentic rendition.

Ingredients

  • Olive oil
  • Soya sauce
  • Red wine vinegar
  • Black pepper
  • Coarse sea salt
  • Chili
  • Rosemary
  • Origanum
  • Parsley
  • Basil
  • Thyme
  • Garlic
  • If you like a hint of sweetness, add a touch of honey or brown sugar

Quantities

Use more of what you like but always enough olive oil. Chimichurri is more of a sauce than a paste. The beauty of any Chimichurri is that you don’t have to use all the ingredients.

Method

Chop the solids and add the liquids. Give it a good stir.

Tip: Do not use a blender to mix it up, rather individually chop all the greens. When you over-process olive oil, it will oxidise, and it becomes bitter.

Marinade the meat with the Chimichurri sauce for +- 30 minutes. Braai the steak and occasionally brush with more sauce. Just before you remove the steak from the coals, apply a healthy brush of Chimichurri.

Wine recommendation: Charles suggests pairing the Zevenwacht Estate Syrah with this recipe, as the wine offers delightful elegance. Syrah's versatility beautifully complements various flavours, and its freshness harmonizes perfectly with the vibrant notes of the Chimichurri sauce.
