Too many of the sniff- and spitterati elevate themselves into such heights of wine snobbery, making you feel you need some kind of degree to be able to enjoy a bottle of wine. Fortunately, Martin Moore, founding Cellarmaster takes his wine seriously, but taking it all with a playful sense of humour. The Durbanville Hills Sparkling Sauvignon Blanc nv is just such a fun wine.

The Durbanville Hills Sparkling Sauvignon Blanc nv is just such a fun wine. Nothing fun however in the making thereof.

The Sauvignon Blanc grapes for this sparkler were sourced from the lower foothills on the Western side of the valley where the Durbanville Hills Winery is situated. Careful checking of grape ripeness is taken to ensure that the flavours are gentle as they are intensified once the wine is carbonated. Careful cellar elevation took place, exactly the same processes used as for making a white wine. Advanced cellar technology is used ensure maintenance of the special flavours of this noble grape variety. Once ready, the wine is prepared for bottling.

It looks like
Bottled in a traditional Champagne bottle with a natural cork closure and a wire muzzle which are left open rather than covered with foil.  In the glass, a gem bright golden straw with rapidly rising to the rim.

It smells like
Nice melange of the green and tropical aromas of Sauvignon Blanc. Tickly bubbles.

It tastes like
Enlivened by the bubbles, the ripe fruit flavours in the wine are truly refreshing.

It’s good with
This is the ultimate any time wine. No need for a celebration to open this one. It is also good with food. It is medium dry and spicy foods are its ideal match. Gentle fish or seafood curry, sushi or ceviche. Serve it well chilled and have a second bottle in the fridge!
