Harvested by hand, the grapes are brought to the cellar where they are cooled to 12°C. Once at temperature, they are destalked and crushed lightly. The free run juice and a light pressing juice are then fermented slow and at 13°C. The wine is then prepared for bottling

Good whiffs of the ‘green’ aromas of Sauvignon, fresh cut grass and scrunched fynbos herbs.
