Jasper works with an impressive selection of South African producers
by the glass in his winelist: Rijk’s Pinotage, Morgenster White,
Aaldering, Bosman, Springfield and Bouchard Finlayson.
He likes working with South African wines
because of their terroir-driven styles and diversity and he finds them
the most “classical” of the New World wines. Jasper is a big Swartland
fan, but also loves the wines from the cooler climates such as Bouchard
Finlayson and Hamilton Russell. One of his all-time favourites is the
Boekenhoutskloof Semillon. South Africa’s sustainable approach has a
great appeal and he sees the future very positively.
His dream trip: to
spend two months in South Africa visiting the different wine regions and
their winemakers.
