In
preparation for this annual highlight on the social calendar, one of the
country’s best loved celebrity chefs, Reuben Riffel and Assistant Chef Tiaan
van Greunen, shared their smoking hot braai secrets and guided a jovial group
of ‘braaistros’ and foodie firebugs through the art of gourmet grilling.
“This
interactive ‘braai boot camp’ was more than just about throwing meat on the
coals. It was about celebrating South Africa’s common heritage and honing ones
skills to ensure a blazing success, every time you light that fire. We took the
backyard barbecue to gourmet heights,” explains Tiaan.
Meat
aficionados and vegetarians were in for a sumptuous treat and a few
‘local is lekker’ surprises when the chefs added their own sizzling spin on
this ubiquitous South African style of cooking with unique main and side dishes
straight off the grill. The guests tucked into a delicious four-course fire and
smoke inspired feast, ranging from savoury appetizers, and a braai fondue to
caramelised, flame-kissed dessert delights.
Besides
inter-active and enlightening cooking demonstrations, enthusiasts were also
given the opportunity to create a tasty braai-based starter from a ‘mystery
box’ of ingredients in a culinary quest to be crowned the ultimate ‘Tongmaster’
of the day.
And where
there is smoke and fire, there must also be an infusion of refreshing
libations, therefore the guests were also given the opportunity to pair the
dishes with a selection of wines from the area and were guided by certified
sommelier, Susan Cashin, in discovering and understanding their own unique
taste preferences.
