The evening will be co-hosted by Azure together with Vilafonté winemaker Martin Smith. Vilafonté’s 16 hectare vineyards, located in the Paarl region in the shadow of the Simonsberg Mountain, are amongst the highest density planted vineyards in South Africa. Since its inception, Vilafonté has focused its attention on only four noble Bordeaux varieties, which are presented in two distinct series, Series M (Merlot and Malbec) and Series C (Cabernet Sauvignon and Cabernet Franc). Guests will be able to enjoy these fine wines in the appropriately elegant setting of Azure Restaurant, which delights diners with stunning sea views, contemporary elegance and innovative fine dining. Upon arrival guests will be welcomed with a glass of Warwick Professor Black Sauvignon Blanc 2012. Azure will then commence the feast with Lamb tagine with braised onion, smoked chickpea and saffron butternut gremolata, accompanied by Vilafonté Series M 2009. The second course will comprise Springbok loin with celeriac parsnip puree, marinated shitake mushroom and cherry jus, matched with Vilafonté Series C 2009. For the third course, diners will be able to tuck into Curried lamb brawn with kohlrabi cream and cauliflower piccalilli gel, served with a cucumber zucchini salad and enjoyed with Vilafonté Series M 2010. The final course presented will be Beef fillet with blackened guinea squash, asparagus and rocket crumble with whole green pepper and honey jus, paired with Vilafonté Series C 2010, before the dinner ends on a sweet note with Petits Fours served with Coffee.
