Pairing Pinot Grigio with a perfect summer recipe

In the heat of Summer, a cool glass of white wine is a life-saver and so to is an easy recipe that doesn't require you slaving away in the kitchen.
This recipe will happily serve about 4 people and is perfect with melba toast.

Ingredients

    • One tub of cream cheese or smooth cottage cheese
    • 2 tablespoons freshly squeezed lemon juice
    • Dash of Worcestershire sauce
    • 1/4 cup sour cream
    • 2 pieces of smoked trout that is minced. (around 150grams)
    • 3-4 spring onions chopped. You can include some of the green part too
    • 1 tablespoon capers, drained
    • A good helping of ground pepper and salt
    • 1/2 teaspoon of paprika and I add a bit of chilli too

Instructions

The simplicity of this dish is fantastic.
Using either a stand mixer (e.g, a Kenwood or Kitchenaid) or a hand-held mixer, beat the cream cheese, sour cream, worcestershire sauce and lemon juice until creamy and smooth.
Fold in the trout, spring onion, seasoning, capers and paprika.

Serve with a chilled glass of Two Oceans Pinot Grigio and pretend it took you ages to prepare.
