Dornier Merlot is a true labour of love. Given the variety’s propensity in South Africa towards being either green, overripe or even both, meticulous care is taken in the vineyards so as to ensure the perfect canopy control to facilitate even ripening. In the cellar the fruit is handled delicately accompanied by subtle oak integration so as to preserve the integrity of the fruit. Whilst Merlot is fiddly to work with, Dornier Merlot bears testimony to the classic beauty of the variety.
“Matured for 18 months in French oak barrels, 40% new. Black and blue berries, earth and pencil shavings on the nose. Good fruit concentration, lively acidity and firm tannins – a big wine with plenty of flavour intensity.”
