Michael Olivier
The grapes for this big bull of a wine come from the fabled slopes of the Helderberg in the Stellenbosch Wine Appellation.

The vineyard care is really where it all starts off with leaf and shoot thinning in October and then again in December. Leaf canopy management plays a big role as does more shoot trimming in January to allow the vine to pump all its energy into the grapes, ripening the fruit and tannin content.

In the cellar great care is taken to preserve the integrity of the grapes. Harvested by hand into small lug boxes, the grapes are destalked and then sorted to ensure only the best go through for winemaking.  After fermentation, the wine lay on the skins for a month before pressing. The wine was then taken to French Oak Barrels, of which 30% were new, for about 15 months.

Pour

From a Bordeaux shaped bottle, closed with natural cork. The Label is in black with a ‘chalk’ drawing of Roxton. In the glass the wine is a gem bright dark bloodplum, at the heart which pales out to ruby crimson at the rim. The aromatics are benchmark Cabernet Sauvignon, with some of its parents, Cabernet Franc and Sauvignon Blanc. Cassis, elderberries, plums, and an undertow of well applied oak and its concomitant spice and vanilla. On entry the wine has a fine line of acidity and ‘iron-hand-in-velvet-glove’ well integrated tannins. The fruit is sappy from sweet ripe fruit. The wine is layered, broad, deep and dark. Certainly a complex ‘masculine’ wine.

Pair

The Brampton Roxton Black Cabernet Sauvignon 2020 is red meat country. A perfectly barbecued tri tip steak with a rich Bearnaise sauce, or well flavoured home made herb butter would do the trick.
